Bumbles® Quinoa Salad

Bumbles® Quinoa Salad wLogo

 

Ingredients:

  • 1 pint Bumbles® yellow grape tomatoes, halved
  • 3 Aurora™ Bites mini peppers, diced
  • 1 cup quinoa
  • 1/4 cup red onion, diced
  • 1/2 – 3/4 fresh lemon, squeezed
  • 1/3 cup crumbled feta
  • 2 tbsp. extra virgin olive oil
  • Sea salt and freshly ground black pepper, to taste

Directions:

  • Follow cooking instruction on quinoa package.
  • In a bowl, combine Bumbles® yellow grape tomatoes, oil, lemon juice, and parsley. Mix well.
  • In a mason jar, layer it with Aurora™ Bites mini peppers, quinoa, and Bumbles® yellow grape tomatoes.
  • Divide feta cheese equally to each dish and sprinkle on top.
  • Use remaining parsley for decoration.

Tips: Quinoa can be substitute for Couscous.
