Vietnamese Rice Paper Spring Roll (Goi Cuon)

Trying to find something to do with the family? Vietnamese Rice Paper Spring Roll is the way to go!

Pickled Carrots:
1/2 lb. carrots -shredded in food processor, sliced in thin rounds or thin match-like strips.
1/2 lb. daikon radish – cut same as carrots.
3 cups warm water
3 Tablespoons distilled or rice vinegar
2-3 tablespoons sugar, depending on how sweet you want your pickles
2 tablespoons salt

Sauce:
2 tbsp white sugar
¼ c fish sauce (patis)
1/3 c water
2 tbsp lime or calamansi juice
1 garlic clove, minced
½ tsp garlic chili sauce (store-bought)
For the hoisin sauce mixture
¼ c hoisin sauce (store-bought)
1 tsp finely chopped peanuts/almonds/walnuts (whatever you prefer)

Spring Roll:
12-16 medium-size shrimps, cooked, peeled, deveined
12-16 fresh basil leaves, stems removed
1 cucumber, peeled and cut lengthwise into thin sticks
24-32 fresh mint leaves, stems removed
12-16 fresh cilantro leaves
1 c chopped lettuce leaves
1 small bunch of Fresh chives
60 g rice vermicelli 

Shrimp (Optional):
1/2 lb. shrimp (36/40 size) (453g)

Fill a small pot with about 2 inches of water (just enough to cover the shrimp). Add 1/2 teaspoon salt and bring to a boil. Add the shrimp. Boil for about 1.5-2.5 minutes on 70% heat until the shrimp is no longer translucent in the middle. It will be quick so don’t go anywhere! Remove the shells and tails and clean off any remaining shrimp intestine. Split the shrimp in half along the body. 

Pork Leg (Optional):
1/2 lb. pork leg (453g)

Fill a small pot with water about 1.5 inches above the pork, add 1 teaspoon salt and 1 teaspoon sugar. Bring to a boil on high heat then lower to 60% for about 30 minutes. It is done when it floats or when it is no longer pink in the middle. 

Vermicelli (Rice Noodle):
4 c water for the vermicelli
60 g rice vermicelli

Bring a large pot of water to a boil. Add rice noodles, and cook for 2 to 3 minutes or until al dente; do not overcook, or they will become mushy. Drain. 

Rice Paper:
2 c warm water for the rice wrappers
